Granola with Coconut and Peanut Butter

This recipe is from my friend Amy Ansen.

Dry Ingredients
8 cups old fashioned oats
2 cups grated coconut
1 tablespoon cinnamon
1 c crushed nuts

Sauce
1 cup butter
1 cup brown sugar or honey
1 tablespoon vanilla
1/4 cup peanut butter

Cook sauce ingredients over stove.
Pour over dry ingredients and mix well.
Spread out on 2 cookie sheets with edges.
Bake at 325 for 10 minutes.
Stir, then bake 20 minutes more.
Let cool on cookie sheets for 6-8 hours.
(Raisins optional)
